How many times have you walked through the bakery at your local grocery store and eyed those Pink Lofthouse Cookies? Before I became GF those were one of my many guilty pleasure. There is just something about them that is SO delicious, like melt in your mouth good.
Somehow or another I managed to make these gluten-free cupcakes that tasted SO similar to the Lofthouse Cookies I almost died. It was the first time I had tasted those flavors in years! The minute I took I bite I thought to myself, “oh these flavors are familiar, oh my gosh, they taste just like those amazing pink cookies in the bakery!”
I came across this combo completely by accident. I was making GF cupcakes for Baby E’s Birthday and decided to use some of the left over frosting from the ruffle cake on the cupcakes. And that’s all it took. AMAZING!
So if you are wondering how to make these yourself, you just have to follow this very simple recipe.
Ingredients:
1 bag of Bob’s Red Mill Gluten Free Vanilla Cake Mix (Make it exactly like it says on the bag and don’t try any other mixes, it won’t taste the same, take my word)
1 batch of butter cream frosting plus 2-5 drops of red food coloring (I used the recipe found at the Weekly Sweet Experiment)
And that is it my friend! Throw on some sprinkles if you wish and you have yourself some amazing cupcakes!
