Happy 4th of July Everyone!!!
Today is one of my very favorite holidays for so many reasons. I love how everyone comes together to celebrate our independence and has fun doing it. How can you beat great food and friends? In honor of this special day I have an awesome giveaway for you! Let’s just keep the celebration going, right?
It’s no surprise that I am a huge fan of Bob’s Red Mill and I am honored to be partnering with them on this very special giveaway!
I was lucky enough to receive three gluten-free baking mixes from Bob’s and I had so much fun experimenting with them.
Using the Gluten-Free Shortbread Mix I made these Shortbread Cookies with Berry Buttercream Frosting. This was my first time using this mix and I was shocked by how delicious the dough was. It was so sweet and savory, I honestly didn’t think I was going to end up with any dough left over to bake with! Definitely a must try.
Next, I had a chance to try the Gluten-Free Biscuit and Baking Mix. I used the mix to make these Mini Pies with Raspberry Cream Cheese Filling (recipe will be posted tomorrow). This mix made a real soft and flakey pie crust. I loved the texture of the pie crust but I think it could be a little sweeter. But keep in mind, nothing is too sweet for me! Overall, this was a really delicious mix but I might add a little more sugar next time I use it. AND there will be a next time!
Lastly, I made Bob’s Gluten-Free Cinnamon Raison Bread using their mix. I made it according to the package and it was good. My bread was a little more dense than I would have liked, but I think that’s because I have to use egg replacer in my breads instead of real eggs. I think it makes a big difference in some recipes. The cinnamon raison flavor was subtle but tasty and with a little butter this bread was really good. It was best served warm.
