Now that the mornings are turning cool, the leaves are starting to fall and there is an extra crisp in the air… I think it’s finally time to start posting some fall projects and recipes! What do you think?

Today, I’m sharing a super simple recipe for Easy Trail Mix Bark. This would make a great afternoon snack or package it up and give it as a gift for an upcoming holiday.

Trail Mix Bark

I was really excited when EnjoyLife Foods let me know about their brand new No Nuts Trail Mixes. While I’m not allergic to nuts, I am allergic to soy and find that most packaged trail mixes (especially ones with chocolate) have some form of soy in them. Total bummer. But not these. If you aren’t familiar with EnjoyLife Foods, all of their products are free from the 9 most common allergens making them a total dream come true for people with food sensitivities and allergies.

I was able to try out both the Beach Bash and Mountain Mambo mixes and I have nothing but great things to say about them. You wouldn’t even notice that there were no nuts in them. The Beach Bash was very fruity and full of flavor and the Mountain Mambo had all of your favorite fall flavors including apple, cinnamon, chocolate and pumpkin seeds.

The Mountain Mambo was delicious on its own, but as always I wanted to play around with it so I made some Trail Mix Bark!

Trail Mix Bark

Start with 1.5 cups (1 bag) of EnjoyLife trail mix and set it aside.

Trail Mix Bark

In a sauce pan combine the butter, coconut oil and maple syrup and bring them to a boil.

Pour the sauce over the trail mix and stir until coated evenly.

Then, place the mix into a nonstick pan. Cover with plastic wrap. Use your fingers to spread the mixture out evenly into a thin layer (FYI, mine didn’t cover the whole pan).

Place in the refrigerator for 1-2 hours or until hard.

Using a knife, cut it into squares or the shape of your choice! This Trail Mix Bark has a really delicious flavor combo. The hearty seeds and fruit are nicely complemented with the sweetness of the chocolate chips and maple syrup sauce.

Note: 1.5 cups of trail mix only makes 8-9 squares. I suggest doubling this recipe if you want to make a larger batch.

We LOVE making our own Trail Mix. We buy in bulk from Azure Standard and Love when our shipments come in. Trail Mix is always on the top of the list. :) Looks great!

This looks like the kinda thing I would get fat eating because I’d convince myself that everything in it is pretty good for you, so it must be good – ignoring that whole moderation thing :P
