Pistachio Chicken Spinach Salad

This is the time of year when everyone is trying to eat healthy and fill their diets with lots of greens and clean eating! I’ll admit, it’s reallllly hard for me. I have such a sweet tooth and being a stay-at-home mom and a working mom, the second nap time hits I jump into work and often don’t take the time to make something healthy for myself for lunch. So I’m trying something new.

My new thing is to make one big salad filled with fresh greens, protein and lots of goodies and keep it in the fridge all week. That way all I have to do is dish some up, pour my dressing on and I can eat while I work. We’ll see how this goes!

This week I made this delicious Pistachio Chicken Spinach Salad with a homemade Honey Balsamic Dressing.

The flavors work really well together. I love the sweetness of the fresh fruit paired with the salty pistachios is a great combo.

Pistachios

Pistachios are such a healthy addition to the salad and also make a great snack. Valerie Waters, a celebrity trainer, suggests that eating an in-shell snack, such as pistachios, provides an important visual cue about the amount consumed and may reduce calorie intake. I know I started to see that pile of shells build up and kept thinking about how many I was about to consume in my salad! (plus my fingers hurt)

Valerie also suggests that we don’t always need a full hour workout (music to my ears), she suggests starting with 30 minutes a day and then gradually increase.  This is what I’m working on. Does 30 minutes of painting a wall count?

It’s so easy to just grab a handful after my lunch and get working around the house! Pistachio Chicken Salad via designdininganddiapers.com

You are so smart for making up your salad at the beginning of the week! I can spend so much time making them each day and I pretty much always use the same ingredients.

This salad sounds delicious! We have a link up for Healthy Tips and Tricks and would love for this salad to be included! Please stop by Monday night if it interests you – we’d love your input!
